Jamaican Jerk Chicken,Quinoa and Black Beans and an Asian Salad

Partially deboned a whole chicken. Only bones left were the wing and leg bones. Salted with 2tbls of kosher salt and in the fridge for 2 hrs.
1/2 of the chicken got a heavy dose of DP Jamaican Jerk for tonight's supper and the other half along with 1 BS breast just got S&P and will be used to make chicken salad. We've been on a chicken salad kick if you haven't noticed.
While tonights chicken was on the mini with some peach wood and the salad chicken was on the small with just straight RW I made the quinoa and black beans
The chicken was done and waiting to be cut up

And served with an Asian style salad. I know it doesn't sound like the 2 would go together but they paired quite nicely

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

That looks money. I really gotta try and get in on this quinoa thing. Nicely Done!!I raise my kids, cook and golf. When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

The quinoa was loaded up with cumin, a nice hit of DP JJ, onions, beans and fire roasted tomatoes.
