A Honduran inspired meal and I ad-libbed a casserole...it was good

I have been away from the forum and out of the country for a while. I went to Honduras for a mission trip and experienced some amazing food while there. Beans, rice, chicken, avacado, chicken and occasionally beef, corn and other veggies are their staples along with homemade corn tortillas. They make it all taste very good. It was an amazing experience and I was inspired.  Yesterday I made a dish of beans, beef, cheese, corn, peppers and avacado. 



Today was not really a Honduran inspired meal but was still really good. I started with some frozen hash browns, threw in cream cheese, cream of mushroom soup, shredded cheddar, sauted onions and several peppers(poblano, red, yellow and orange). I mixed it all and added tomatoes, parmesan cheese and seasoning. Then I baked it for an hour at 400*. It was really really good. Along with a prime ribeye and some polish sausage, wow what a meal.
