Drop Dead Delicious Ribs
Had the day off today so I decided to make some ribs. And I figured why not try something different. I started with 50% DIzzy Dust then added 25% MC Honey Hog and 25% MC Bacon BBQ. I like all 3 and now I like them even better combined
Smoked at 275 with peach wood, started bone down, flipped after 45 minutes. After 90 minutes I wrapped with a little apple juice and glazed the top with Drop Dead Delicious Amaretto Cherry Jalapeno Sauce. Left on like that for 30 minutes, then unwrapped and put back on for 15 minutes. While I loved the results next time I will skip the wrapping.
The results:

Brisket goes on in 4 hours, I'll keep that one simple, Holy Cow and a little beef broth injection. Well at least that is the plan -

Pulled off at 200 and rested for 45 minutes, would have liked to rest it a little longer but still happy with the results. Love that Holy Cow stuff !!!
Served with some fully loaded potato salad, now i'm ready for some football

Holy meat coma...that all looks great. That cross section of the spare rib looks crazy good.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

30 minutes Bone down wrapped
15 minutes unwrapped
So 2 hours 15 minutes total at 275
Did them again this past weekend and did it:
45 Bone down
45 Bone up
45 Bone down, no wrapping this time
Used two different Fat Bastard Sauces and one naked this time. Naked was best

Wow, that's a significant difference from the 6 hour 3/2/1. Even when I have cut time down to 2/1/1, they don't need cutting and they just fall apart off the bone. I'll have to try the above as I like just a little bit of pull.
