Meatloaf roll up (pic heavy)

My wife showed me a You Tube video of this recipe, and since it's meatloaf I ignored it and did my own way, but I liked the jelly roll idea so I stole that part.

3 lbs. ground 80/20
Sauteed onions (1)
1 lb. Bacon,  cooked crispy
Montreal Steak spice or whatever you like
S&P
Steak sauce
Worcestershire
Sun dried tomatoes
Sauteed mushrooms
Romano cheese


Roll the beef out and make it a rectangle, short side of the rectangle is your meatloaf length, long side is your thickness.
Get it as square as you can, but don't kill yourself, it's just meatloaf.

Add all the above ingredients and spread evenly across the top of the rectangle.

Roll it up like a jelly roll, seal the ends, top with ketchup or Sriracha or whatever you like.

300 f. egg for about 45 minutes - hour. I cooked it to 160f.
