Plate rib dinner

Hi, all

Haven't posted many images over the last few months. Really, mostly pork steaks, hot dogs, burgers, chix pieces. Nothing special at all.

But I supposed I should post something. So, tonight's diner. Beef plate ribs for 2. Very, very simple. Cooked indirect, raised dome running between 250 and 300 for not quite 4 hours. Nice coat of DP Cowlick rub. Some apple wood, and a last minute smear of cultured butter.



Plated a little sloppy: Plate rib, persimmon slices, pickle slices, Col. Pabst wooster, and a little Cholula and Stub's original. In the end, all finger food.
