Filled out a pork tenderloin and stuffed with ham, bacon, red onion, pickle, montereyjack, and some Dijon mustard. Cooked until 130 then untied it and wrapped it in a pizza crust. Let it sit around 400 indirect for 15 minutes or so. Coated with butter and shaved Parmesan and put it back in for another 5 minutes.
