Easy M/W Chicken For A Cold, Winter Day..

Here's a great way to prepare a chicken in the microwave... and it only takes 35-45 minutes!  
I usually choose a bird that averages about 4.5#, which will fully cook in 35 minutes on the "high" setting.
You will need a Corningware or Anchor-Hocking deep dish (with a lid) that will accomodate your bird and 
rotate freely in the oven.
Prep the chicken; remove the innards & unwanted fat and season to taste inside & out with salt, lemon pepper
and garlic powder.
Put 1/2 of a pierced lemon inside the cavity and a few pats of butter under the skin of each breast
(being careful not to break the skin).
M/W ovens vary, so use your instant-read thermometer to check for doneness.
While the chicken is cooking, you should have enough time to prepare a few side dishes.
When the bird is done, you can skim off any unwanted fat, add the savory juices to some stock and stir 
in a few tbsp of prepared roux to make a delicious gravy.  
Try this just once and you'll be amazed!!~~
