@Jcacavias thanks for sharing! I am definitely going to give this a go. I see some breakfast quesadillas in my future as I fire up the egg for some weekend all day cooking.Bloomfield Hills, MI | LGBE : AR R & B Oval Combo w/Extender and Sliding D Grid : Kick Ash Basket : Smokeware Cap : Smobot Beta

Thanks all! This was a ridiculously simple cook that got rave reviews from the wife. Highly recommended.

Great idea sometimes simple is the best. Will have to try it soon.

Nice pizza stone application. Did you use platesetter so as to cook ingredients longer in shells? Did you have everything prepared and cooked before building? Interested. Love this one.

@VANcouverEGG setup was plate setter legs up, grid, pizza stone. It took about 4-5 min per side for the tortilla to crisp up and the cheese to melt. The quesadillas were entirely pre made before putting them on the stone. I was running about 450-500. I opened up the egg probably more than I should have, but I didn't want things to burn because this was my first time doing this cook. Good luck!

Gotta try this, looks like the crunch I'm after!Egging year 'round in North Dakota

I'm assuming the chicken and peppers were precooked?
-
@cul-de-sac-er that's right. Hatch chiles were roasted a few weeks ago and frozen. Chicken was done on the egg before I put the plate setter and pizza stone in.
