I just made a couple of pulled pork pizzas last week. Dough brushed with seasoned pizza oil, a layer of smoked gouda. Lots of pulled pork, some maple braised leeks and another layer of four chese blend. When it came off I drizzled some maple bacon BBQ sauce over it. I'll usually make carnitas with left over pulled pork (poblanos, chili powder, etc). I've tried Asian lettuce wraps a few times with fish sauce, soy sauce, rice wine vinegar, all wrapped in boston bib lettuce.
Last week I made a roasted garlic butter and caramelized onions then mixed that into the pulled pork--very good. Then I made a Alabama style white sauce but mixed in a little mustard, red BBQ sauce, and hot sauce.
The next day I made "pulled pork salad" like chicken or tuna salad......fail.

I use a Food Saver vacuum sealer and heat it up later.

"Street tacos"! Corn tortillas, chopped onions, cilantro, and queso fresco. A squeeze of lime. That's how we roll in Houston!

I also did pulled pork omelettes this week. I sautéed some onions, warmed the pork in a little butter, and used. the queso fresco left over from the tacos (I would typically use cheddar but was out). The omelettes are filled with the ingredients and also have some sprinkled on top.

@TexasCurt I'll be trying your way on the street tacos. Mine are good, but I think I over complicate them with too many ingredients. Let the pork be the star of the dish as they say on TV.Phoenix
