Spatchcock Success

I got my Large BGE as a gift several months ago and I love it.  First time to post on the site but I have been reading posts since I got the egg and it has helped a lot. 

Cooked my first spatchcock chicken this weekend and I will never cook chicken any other way.  I brined the chicken on Tuesday night with salt, sugar, brown sugar and Meat Church Deez Nuts and Honey Hog BBQ.  I took the chicken out of the brine on Wednesday night and rinsed the brine off.I dried it and added more Meat Church Deez nuts and Honey Hog BBQ and let it sit uncovered in the fridge until Friday.  

Friday I took the bird out of the fridge about an hour before i started to cook.  Fired up the egg to 375' for a raised direct cook.  The chicken cooked between 375' - 400' for about an hour and it came out great. I pulled it off when the breast was at 165' and let  it sit for about 30 minutes.  Chicken tasted great and the skin was crispy.  Going to try this same method for turkey this week.

    Well, "spa-Peggy" is kind of like spaghetti. I'm not sure what Peggy does different, if anything. But it's the one dish she's kind of made her own.

    The color on that bird is unreal.  You nailed that for sure. 


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.
