Low and Slow Tri Tip Taco's using the Party Q

Hi folks, I'm a 'Santa Maria' Tri Tip kinda guy, but after getting this really cool BBq Guru Party Q a few days ago, I thought what the heck, how about a low & Slow 225 degree tri tip cook ...
Got an incredible deal on the tri tip @ my local market. The party Q was so simple to use. I connected it the the egg, dialed it in @ 225.
I pulled the tip when the internal temp hit 130. Pulled the plate setter, opened things up and let the temp hit 650+ .. reverse sear 2 minutes a side.
Perfect!
Rested, then sliced ... Tri tip taco's on flour tortilla's with spanish rice, pico de gallo and topped with Cojito cheese. They were incredible.
