Easy and tasty Breakfast

During a cooking demo this am at our local Egg Dealer, my fellow chef Rob and I were cooking with back bacon.  We decided to take it up a notch, (mostly cause we are hungry) and made these little delights.  Slow cooked back bacon, sliced and grilled in a cast skillet, sliced some large onion rings and placed in second cast pan, added some butter and cracked an egg into each onion ring.  While both reached perfection, we toasted some english muffins.  I will say these were mighty good, on my next attempt I will surely add a cheese slice and maybe some thick sliced bacon as well.
