My fourth try at brisket....and I finally picked up my table.

Finally, a brisket I can be proud of. It was the $1.79 /lb choice packer that's been in freezer for a year and a half. I rubbed it with salt and pepper and smoked it for 15 hours with oak chunks. The results are fantastic. Great smoke ring, nice bark, super moist meat...and it even jiggles. 


While the brisket was smoking this morning --I took a quick road trip to pick up my custom table. Dad and I will be finishing it next weekend.
