Not a lot of time tonight so I just egged these direct at 350 til done...and they were great.
I did wonder though...woukd these be a good SV candidate?

Those do look awesome, congrats!
As for steaks/chops/roasts I think the best SV candidates are anything that's fairly thick, but there's no reason the technique won't work for all cuts. I do think those chops would be a good candidate for SV, but I also think what you have posted above looks pretty delicious already. If you felt like they were at all dry or over/undercooked I would give the SV a shot and see what you end up with.
