Lot's of ways to do great wings. In fact, you're options are almost endless. How do you like them or done them in your pre-egging days?

I've been known to cook a wing or two in my day. I wouldn't bother smoking them. You'll wind up with rubbery skin. You can still cook indirect, just use a higher temp ie 400 at least.

smoked wings are the best! - Heat egg to 275 (indirect) - we coat wings lightly with oil and coat w/a dry wing rub or you could soak in Franks wing sauce for about 30 minutes. Put wings on for between 40 minutes to an hour turning every 15 minutes- after an hour raise temp to 300-325 and smoke for another 30 minutes or until you know they are done. Take em off and toss em in sauce if you must - but enjoy - we love our smoked wings - definitely on our tailgate menu!!!!

Love smoking wings. I found if you throw a little bacon grease in with them before you throw them on you'll get great results.

Flavor with your favorite seasoning and then dust them with corn starch and let them sit in the ice box uncovered for about 2-4 hours. Set the egg up for indirect at 275. Turn every 20 minutes or so until done. You will love themGo Gamecocks!!!

Smoking in Aiken South Carolina -
If you decide to smoke them rather than grill them - I would suggest 225*/240* for just shy of two hours. But I would strongly suggest that you remove the platesetter and grill them meaty side down, direct for 5 minutes or so after you pull them. Otherwise the meat is awesome but the skin will likely be flabby. Five minutes direct at the end and they will crisp up perfectly. I typically do raised direct for all poultry other than chicken wings. I like to do indirect at 400 for about 35 minutes and then add sauce for 5 or so. To me it is much easier to manage the cook as you do not have to worry about flipping the wings. Good luck!
