First Cook on Saturday!

This is definitely the cleanest this thing will ever be again! My first cook on the egg was OK.  I wanted to have some people over for it but typical Miami weather said no!  It poured all day.  Not one to quit, I went ahead and fired it up anyway.  Even with the rain it started quickly.  It took a bit of fussing to get it up to temp (I figure I did not let the fire stoke enough before shutting the lid) but once it got there it stayed pretty steady without too much work.  I did get it a bit too hot (300) for what I wanted to do which shortened my cook time down to about three hours.  The ribs were over done and fell apart, but the pork loin was super tender and had a great flavor profile.  The mesquite I used really came through well. I enjoyed the loin so well that on Sunday I went and bought 4 more lbs to smoke for the week at work!  The second cook went better.  I let the fire come up a bit and was able to catch the temp @ 250 on the first try!  I smoked them for four hours then cracked up the heat to about 600 and grilled on of the most amazing pieces of swordfish that I have ever had!  Lots more to come!
