started with a pretty small pork butt from Costco a little under 4 lbs. When i started looking at how to cook most were the 8 to 10 lbs range.  Was telling me to cook at 275 and about 1 hr per pound. So being smaller and wanting it to smoke I decided to go lower so it would smoke longer.  Rubbed the meat the night before and let it set in the fridge for about 15 hours.  Set the egg with the plate setter legs up aluminium pan on plate setter and grill grate on plate setter legs and temp at 250 added some apple chunks to the coals.  and now we wait and wait and wait and wait.  It took a lot longer to cook than i thought.  Cooked until it was a 160 (6 hrs later) internal temp took it off rapped in aluminum foil poured apple juice in the foil and put it back on and raised the temp to 275 until it reached 190 (1 1/2 hr)pulled it off the egg let it rest for 30 min which was a struggle with the smell that was floating around the house after i brought it in. Damn was it good
