Caribbean Pork Chops w/ Mango Salsa and Stuffed Sweet Peppers (Mini BGE)

Gave the Mini some sweet lovin' tonight.  ;)
The sweet peppers were stuffed with Shredded Southwest Potatoes and Spicy Sausage that I pre-cooked.  They were then seasoned with Caribeque Island Thyme.  About 10 minutes before they finished, I tossed on a little shredded Monteray Jack.





The chops were also seasoned with Caribeque Island Thyme.



And finished with some fresh mango salsa:



It tasted even even better than it looks.  :flushed:
