another pizza success

Here is our dinner tonight cooked at 650 for about 10 min. with dough made from 00 pizza flour. Our first time using that flour the wife loved the way it mixed up and was a lot easier making into a pizza base then any other we have tried to far. It was good but I think could have been better i need to drop the temp to maybe 600 and get the dough a bit thinner. It was nice and crispy but I think the toppings could have been cooked a bit longer.

    @scottn83 -  Looks pretty good!  When I did BGE pizzas using "00" I would often times blast the top at the end under the oven Broiler with the oven grate at the top rack . . I would put the BGE cooked ZA on a cooling rack, over a baking tray (so bottom crust doesnt steam and get soggy) and wait until top is done . . .  just an idea to try.

    I got some 5 dough balls cold fermenting now in a cooler with a frozen water bottle . . gonna bake on sat night - cant wait !!

    What is this "00" that I keep reading about? Dough from scratch?

    @dmirish1   "00" is a type of flour people use for pizza . . compared to other flours like All Purpose or Bread Flour . . . it does much better with HIGH HEAT (~700F - 1000F).

    dmirish1.. 00 is the grind of the flour..its extra fine. Great for pizza crust and flat breads

    Not trying to hijack your thread, but here is good shot of some "00" dough that I baked at 900F (on blackstone oven).  I could not get the black "leopard spots" until switching to this flour.   I have been on a pizza quest .. and found that one of the keys is to pick the right flour & dough based off the heat you bake with.

    yes dough from scratch couldn't find it in the Lexington area so ordered it from amazon
