    they were well cooked but too much smoke for me.  Next time, one wood, not hickory.  Husband loved them and agreed on smoke.  heard there is hickory in the charcoal so the hickory overpowered it  for my taste.  any suggestions welcome..  thx

    Try pecan and/or a fruit like apple, cherry or peach. Much more mild smoke.

    1-3 large chunks for a long cook like that is plenty for my family - along with a neutral lump like Rockwood.

    Those look pretty good form here. I'm too lazy to wrap and all that stuff, so i just let 'em ride nekkid.

    As suggested above try fruit woods. Milder flavor, that goes well with pork.
