So with the garden producing more than we can consume and give away combined, the wife and I decided to make a batch of chili. At least we started with the idea that it would only be one batch, but it quickly turned into and all day affair. Most everything either came from the garden (except the beans) or from the woods (6 pounds of deer tenderloin).





We really did not anticipate making this much when we started out, but our initial batch was too much for our 7qt Cast Iron Dutch Oven, and we hadn't even put the meat in yet...



So after we realized this, we decided to dump it all into a much larger (24qt) pot simply to keep everything mixed and equal, and continued to cut up more fresh vegetables and meat.


Then we split it. Enough to fill the CIDO for the original plan so the family can eat chili tonight, and now enough to pressure can to fill the cupboard.
So some went onto the Egg with Cheery wood, and some went into the canner.



The end result was AWESOME if I must say so myself!!

That looks great. We also have peppers taking over our kitchen from the garden and I had already decided to make chili next week. That is a truly serious pressure canner.

Lol - it is a pretty serious pressure canner. We took the same thought process when purchasing that as we did with the Egg. Only cry once with the purchase. Go big or go home. It is made in America, called the All American 921 and is solid aluminum and VERY well built. It should be able to be passed on for multiple generations.Lake Keowee, SC

No doubt, it's very nice and I love my kitchen gadgets. That's a keeper.
