What time zone are you in? Should be good to throw in the cooler now unless you are in pacific time slot.I raise my kids, cook and golf. East Coast. I was worried that if it gets thrown in to cooler too soon, bark will get mushy.

What grid temp? What is the internal temp of the meat? Does a probe slide in and out like butter? It is hard to over cook a shoulder...Southlake, TX and Cowhouse Creek - King, TX. 2 Large, 1 Small and a lot of Eggcessories.

I agree with @smbishop. Really hard to screw it up. The egg just kills it on butts. The ceramics produce some really moist pork. Enjoy the evening.

In three hours it will still be too hot to touch and the bark will be fine.

Unless you want a turbo butt, and many do it that way, you can shoot for the sweet spot of 250 and cook longer. Sounds like it is done, but you can go to 205ish. I agree with @Scottborasjr let it rest then double wrap in foil, wrap in a towel, put in a preheated cooler, I have let them rest for 5 hours with great results..Southlake, TX and Cowhouse Creek - King, TX. 2 Large, 1 Small and a lot of Eggcessories.

The next time you find a butt coming to temp too fast, don't be afraid to close the vent down a bit to oh say 275.I've slow smoked and eaten so much pork, I'm legally recognized as being part swine - Chatsworth Ca.
