Hello All,
I have smoked some butts, and ribs on my 22" Weber kettle in the past. Just got my large green egg last weekend. I've cooked pizzas, strombolis, and steaks on it this week we have a cookout planned today so I wanted to smoke something! Started at 3am with the butt (9lb). Just added on the brisket flat (6lb) at 7am! Dinner time is at 5pm. Borrowed my buddies digi q to make things a little easier the first time around. Dinner is at 5pm wishbme luck!

I do have a question what temp do you guys pull your brisket at? When I wrapped it I was sitting around the 160 mark, obviously it was pretty tough. I have checked it yet but my temp now is approaching 200.

200 is a good temp but probe it when it goes through with ease its done.

Just tried sticking it with a probe and it slides in like butter, final temp is 205 going to pull it now and wrap in a cooler for a good 90min
