Beer can chicken question

im attempting this for the first time tomorrow but, I'm not using a can, nor am I using beer.

I'm using a ceramic vessel that is designed to do what the beer can does. I plan on using white wine, but my real question is if it is ok to also add things like garlic and rosemary. While I'm aware they may not really add flavor, I'm going for aroma. My concern is that the wine may burn off and cause the garlic and rosemary to become burned and ultimately add off flavors AND aroma.

Thoughts?
