I have a kid birthday party at my house this weekend.  Guests arrive at 10:30, lunch at 12, I can't be grilling in between as I'll have other chores and also just want to enjoy the party...

  • The menu is a pile of of hot dogs for the kids and home made-sausages for the adults from a local amish market.
  • I was thinking of cooking around 10,
  • when they are done I'd put all the dogs and sausages in a loaf pan or two & covering it with foil..
  • throw the platesetter in the egg as a measure of protection, close the grill, close off the top and bottom vents,
  • and just let them sit in there as the egg cools down. (in covered pans)
  • After 90 minutes I suspect it still won't be below 160 degrees inside the egg at which point I'll take the sausages out, throw them on a platter, and have a hot lunch ready for noon.

Think that'll work or do I risk drying all the meat out?
