Cedar Wrapped Cod
I got some really thin cedar wraps, and I wrapped it around an individual piece of cod. I seasoned both sides of the fish with Stonewall Kitchens Maine Seafood Rub.
I tied it up and cooked it raised direct, 350. The fish was really thin, so it only took like 10 minutes.
I pulled it and served the cod, topped with pineapple salsa, new potatoes, and green beans sautéed with garlic scapes and preserved lemon.

The rub was nice, it reminded me a touch of Old Bay at the beginning, but less herbaceous and a little deeper, and maybe darker/muddier. I'm not sure that makes a ton of sense, but I think it will when you try it.LBGE

I bought a bunch of those thin cedar sheets from woot! and did something very similar. It's a nice presentation.
