2-2-1 Baby Backs and Handcut Fries Last Night

The ribs were so tender it was hard to handle when pulling off the smoker because they wanted to fall apart. Handcut fries were super tasty. Haven't made them in a while but blanched them first and let them sit for a while after that. Once the ribs were finished I re-heated the oil back up to about 350 on the BGE and tossed them back in for a few minutes. A generous hit of seat salt right when they came out and the rest is history!
