Brisket in Freezer Question

Options

Somewhat impulsively I purchased a 9lb brisket on sale two months ago.  It's cryopaked and has been in the freezer since.  I'd like to save it for some family coming next month but wonder if another 4-5 weeks in the freezer will effect the taste, or would you cook it now and then freeze it for the same 4-5 weeks?  Thanks!

It will be just fine waiting in the freezer until you are ready to thaw and cook.  Give it a good 3 days or so to thaw in a fridge.

  • in cryo, in the freezer, quality/taste will be fine for a couple years.  it will be 'safe' forever.

the cryo seal is better than any you could create after you cooked it with an eye to refreezing.  don't waste your time.  just thaw a few days prior to cooking
