Texans....I am looking of a source to purchase (& have shipped)... some Texas smoking sausage...

Actually looking to smoke it myself. Can you make some recommendations as I will need for the upcoming football season. I am assuming (and expecting) a raw uncooked product as opposed to a prepared sausage. Any recommendations with shipping capabilities would be greatly appreciated.

    I don't know where in North Georgia you are located, but the Striplings in Oconee County sells some killer jalapeno/cheddar cheese sausage. Its every bit as good as the sausages I had on a road trip to College Station several baseball seasons ago. Their other sausages are pretty damned fine as well.

    Oh. OK. Probably too far to drive for just that, but if you are planning on coming to Athens for a baseball or football game you need to check Striplings out. I am in there at least 4 or 5 times a week.

    never tried it but it looks like the recipes online are extremely simple. ground brisket point, salt. pepper, cayenne, pink salt, and a little pork butt to bind it. 3/8 plate double grind,150 for 8 to 10 hours

    hadn't ever heard of it before.  this guy talks abut getting some which is raw and smoking it at home, then lists some sources.

    One more thought for you, Smokey Denmark in Austin, they sell a pretty big variety of sausages, some smoked, some fresh and they may be able to ship you what you're interested in.
