Denver Steaks Oh What A Night

in '63, year after I graduated from high school, but that is not what I want to talk about. Heard about these on a high end food show in a restaurant. Denver Steaks or eye of the chuck roll. They are only about 10-12 ozs each and we got 3 1" thick steaks from each roll. The piece is right next to the prime rib which is my favorite cut of the cow and about half the price $5.99/lb.

SO off to my specialty butcher and after a few weeks of waiting these appeared:

Marinated in some worchestershire sauce, s/p and garlic for about an hour. Cooked like any steak and they were EGGtastick. Camera did not get the cooking phase or the plated dish with fresh steamed asparagus.

Well worth tracking down if you like delmomicos or prime rib. Sorry no bones.

Thanks for looking!
