Breakfast Bells

Well SWMBO is out of town this morning, I figured I'd give breakfast on the ol' egg a try. I went to the store and grabbed a bell pepper and some breakfast sausages. I cooked up some of the sausage and the rest went into fatties. I injected one with maple syrup and rubbed with some DP. The other one was rolled out and stuffed. Anyway, back to the breakfast. For this you'll need a bell pepper, sausage, onion, hash browns, cheese and a couple eggs scrambled. As the sausage was cooking, I added some seasoning and somesweet vidalia onion to it until the onions were softened and set aside. Then I went to the freezer in which I thought I had hash browns in and for the life of me couldn't find them. I was about to give up and use tater tots and when I was finally done freaking out like a cursing five year old there they were. I cooked some up and added it to the sausage mixture and spooned into a pepper and poured the egg over it. The egg will find its way into the mixture. Then topped with cheese and some more cheese a few minutes before I pulled it. Anyway, here's the pics.

@johnkitchens Will do. Here's the point cubed up for burnt ends. Dusted with some dizzy pig swamp venom and a light coating of blues hogs smokey mountain.

Turned out pretty good. It was a weird one. The temp stalled out at 187 for about two and a half hours and I bumped the temp up to 300 and it wouldn't budge. The thermapen was pretty consistent on 187-192 so I ftc'ed it. Pretty damn good. NW IOWA
