Moose Ribs and Chuckies

A friend of mine and his wife just had a new baby girl and I'm cooking a meal for them today. Since he gave me some moose ribs about a month ago, I decided to cook them along with a Chuckie for their dinner this evening. My wife is making dessert and Cracker Barrel hash brown casserole. Here's a few pictures of the beginning of the cook on the Large. I slathered the meat with mustard and then a generous dusting of the Meat Church Holy Cow rub. I'll update the post later today.

I just took the moose ribs off the Egg after 8 hours @ 250 degrees. They're in the ice chest resting and the chuckies are done. We'll be packing the food and headed over to meet the new baby in about 30 minutes. I'm anxious to taste the ribs.

The ribs were meaty and tender, but you could tell it was moose, even with the rub, smoke and bbq glaze. Not bad, but different. The chuckies were excellent.

Great looking cook Hawg. I have only had moose once and it was a steak from a restaurant. I like "gamey" food, but it was almost too strong for me.Large and Small BGECentral, IL
