Tri-tip fajita quesadillas

Trader Joes tri tip cooked on the small. Sliced thin against the grain. Griddled some peppers and onions with Badia fajita seasoning and then made some 'dillas. My son and his friend made their own 'dillas and had a great time.  They buried theirs in cheese dip.

    Looks great.  Did you cook the quesadillas on the egg too? If so how?

    I actually cooked these on the Blackstone griddle.  I was downplaying the blackstone a bit because I feel like some peeps are getting tired of hearing about it ;)

    You could certainly do it on the egg on a cast iron skillet or griddle.  I don't have one that fits my small egg but I have a 14 inch that I use on my large.

    Thanks @stemc33!  The boys had fun.  That is one cool thing about the Blackstone is 2 or 3 people can cook at once.  

    Looking back at the pics now it looks like the boys did a better job than I did! The first dilla's with the cheese dip had a better crust.

    @Sweet100s it was the santa maria tri tip. I dabbed off the xtra marinade with paoer towels and added some fajita seasoning.

    I had tri-tip for the first time earlier this month in California and it made pretty darn good sandwich.  I have never seen this cut of meat locally but I would like to try cooking one.

    @gerhardk Costco usually has tri tip if you have one near you.
