Chicken wings, tri- tip and salmon

Parents and in-laws coming over to celebrate father in-laws birthday...  Made some wings and drumsticks marinated in soy sauce and lemon, some salmon filet and tri-tip.


when I do chicken pieces I I like to fill one side of the fire box with lump so that I can get a direct and indirect zone going.  I throw the wings on the direct side and turn until they get a nice color then cook them on the indirect side till done.   Same with the tri tip - sear then go indirect till done.  Don't use a thermometer, just by feel or "sponginess" of the meat.
