First Rib Cook on XL BGE with CeramicGrillStore Adjustable Rig Combo

Afternoon folks, so I finished my first cook on my XL BGE - some NY Strips that came out fairly well for my first go... Tomorrow I'm going to attempt 2 racks of Baby Back Ribs and 2 racks of Spare Ribs.  I'm going off of some recommendations and plan on using the "Smoke it like a Pro" book recipe.  Each rack is about 3lbs and I've been told that total cook time would be about 3.5 hrs on 250 degrees, but then I spoke to a few fellow BGE friends and they advised more like 4-5 hrs.  Thoughts?  

Secondly, I don't have rib racks but have the Adjustable Rig Combo (not BGE Platesetter) that I just bought from the ceramicgrillstore, what is the recommended setup? I know they recommended against using the 24" grid for easy access to the lump, thoughts

Any/All advice for newbie is greatly appreciated...

    While I don't have an XL the only time I need access to the lump in any of my eggs unless doing a super long cook. Id say to start checking the ribs at 3.5 but it could take the full five. Good luck, im sure it will turn out great.

    Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

    I find that BB's will generally finish around 45-60 mins earlier than spares at the same cook temp.  And BB's are in the 4-5 hour range as you note.  Best is to use a toothpick test-probe the meat between the bones and when "no resistance" they are finished.
    BTW-welcome aboard and enjoy the journey.
