Wednesday Night Pork Loin...

Stuffed with Mortadella, hot capicola, roasted peppers, green olive tapenade, and  finally some smoked mozzarella...

Covered the whole thing in bacon... will be making some sauteed spinach & beans for a side

Thanks... It's warm, mid 80's, but the humidity has dropped a lot from the last few days and there is a breeze. Perfect for egging and a cocktail or eight
