Breakfast Pizza

I was babysitting my nephew last weekend and I had some leftover dough. I got up early while SWMBO and my nephew were still sleeping and decided to surprise them with a breakfast pizza.

Topped with hollandaise sauce, leftover sausages, mozza-chedar cheese mix and poached eggs. (I poached the eggs in advance and put them on the pizza after it was cooked)
Used store bought pizza sauce for dipping.
For the hollandaise, I simply mixed 3 egg yolks, 1 Tbsp lemon juice, 1 Tbsp water and some freshly ground pepper. I then heated 1 stick of butter (1/2 cup) to 180F and slowly poured it in the other ingredients while mixing with an immersion blender.
This was really good but as I expected, the hollandaise sauce cooked and became an omelette under the cheese. Next time, I will put the pizza sauce on the dough and use the hollandaise sauce for dipping or sprinkle directly on the pizza and poached eggs after it is cooked.

Looks excellent. I have tried this with an enchilada sauce on the dough as zhe sauce and then topped with eggs and drizzled the hollendaise on top--pretty good tooColumbus, Ohio--A Gasser filled with Matchlight and an Ugly Drum.

Man that looks great. We've done a few breakfast pizzas that were similar. We put the hollandaise on after, but cooked it with the egg already on the pizza, that's a real good idea just putting it on after.
