Playing with Tilapia

I am still playing with the new egg. Tonight I made some Tilapia. Ground some cilantro, garlic, and salt in the molcajete and then added some olive oil and lime juice. Popped it in a pan and cooked it indirect at about 400 for 15 minutes or so. I thought it turned out ok.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
