I thought that I would try a different method of cooking a pork butt this time. I plan on injecting Apple Juice into the Butt, will this affect the cook time? I usually plan on 2 hours per pound at 225 dome.[p]Thanks,[p]Lee

  • clweed,
I don't think it will change the cook time as long at the injection is about the same temp as the meat or higher. [p]Jerry

clweed,[p]I often inject butts with scotts thin sauce, which is simply vinegar, salt, peppers and spices. I have never experienced a problem and find cooking times to be the same. I've also used simple apple cider vinegar, which really provides a great tangy flavor. If you've not tried scotts you should... I've been using it for 12 years and find nothing better. It also contains no sugar, which eliminates the risk of burning as sugar sauces do..beware though it is red peppery HOT. You can buy it at harris teeter or online at http://www.scottsbarbecuesauce.com/quotes.html
