Whipped up @Nuke1855 's (Kurt Halls AKA "biggreenegglife" on IG) family recipe tonight for Plantain Pie. Fan-Freaking-Tastic!!!!! I love trying recipes from different nations. This one is my favorite thus far. Bookmark this.
@Nuke1855 , I'll leave it up to you to provide the recipe. You can explain it better than me.

Looks amazing. Now if Vanilla would start posting pictures in order it would help. But my Lord that looks great. Nicely done and can't wait for more details.I raise my kids, cook and golf. When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

I agree @Scottborasjr ! The order drives me crazy. lol

Looks really good. I might have used a white cheese.

Intersting pie @Dyal_SC. You've shown off you egging talent again. is this pie sweet at all or pure savory? Is it Carribean based? I am trying to imagine the flavors in this.Always seeking the high I experienced from my first true BBQ experience.

I've got this bookmarked. Recipe please!
About the pics order - I always post threads from my PC. When I upload the pic, I right click and cut, then paste the pic wherever I want it to be. I don't post cook threads form a mobile device, so don't know if this would work for phones or tablets.

SO its both sweet and savory. Layers of fried plantains, ground beef, shredded cheese and cream cheese with an egg mixture to bind it all together. I will post the recipe up at www.caribeque.com !QingEsq said:Intersting pie @Dyal_SC. You've shown off you egging talent again. is this pie sweet at all or pure savory? Is it Carribean based? Thx y'all!! I felt weird giving out @Nuke1855 's grandmothers recipe. LOL. But he pretty much summed it up. I'm looking forward getting the dimensions he uses as I'm sure mine may have been different.
Basically it is like a Carribean lasagna. Started with a layer of length-sliced fried ripened plantains, then some Caribeque Island Thyme seasoned Ground Beef (I used lean Ground Turkey), thinly sliced globs of Cream Cheese, raw Eggs and Shredded Cheese. Then repeat. Mine had 3 layers. You want to finish it with the cheese layer on top. Baked mine indirect at a dome temp of 350 deg f for about 45 minutes. The first 15 minutes I covered it in foil. Then for the last 30 minutes, I uncovered it and tossed it a couple Apple wood chips for a kiss of smoke.

@Nuke1855 Thanks for posting the recipe. I noticed you call it Sweet Plantain Pie--are we to use ripe plaintains (the black ones) or unripe ones (green ones)?

@chrisc133 , I had the same question for him. He told me to use the riper ones that have yellowed a bit. Mine were still greenish, but they still had ripened quite a bit.
-
I personally like the yellow ones. I like the sweet savory combo. Some like them a tad bit in the middle of green and yellow.chrisc133 said:@Nuke1855 Thanks for posting the recipe.
