Cheese smoking flavors

I've smoked quite a bit of cheese on the Egg but only used Apple. What other types of wood do you use? Any favorite cheese/wood combos? The Gouda/Apple is great but I haven't ventured too far from that.

I like alder for most...and maple with sharp white cheddar and goudas.I spent most of my money on good bourbon, and bad women...the rest, I just wasted!!
