Smoked maple chicken

Brined for about 3 hours before applying a maple syrup/DP Tsunami Spin mixture. Smoked at 250 w/pecan until 165. Mopped a few times throughout with the syrup/DP mixture. It's a variation from the Smoking Meat website (http://www.smoking-meat.com/july-9-2015-smoked-maple-barbecue-chicken). It was finger licking good! Not a piece remained! Highly recommend this one!

I'm not one to normally foil the plate setter but you may consider it (or just go drip pan). The syrup left a bit of a mess behind but I was able to scrap it off.

That looks simply amazing! We make at least two spatches a week. My go-to wood for spatch is cherry. I may have to give this on a try soon. Great cook.
