Got a new Trizor knife sharpener - I am impressed

Last month, I saw the Chefs Choice Trizor XV rated as the top sharpener by Cooks Illustrated.  These folks test things pretty thoroughly, and don't give top ratings without a good reason.  What got my attention was that it is designed to sharpen with a 15 degree bevel.    It also has the ability to re-angle 20 degree blades to 15 degrees.  

A bit of back  story, I have a Worksharp sharpener (not the Ken Onion model) which sharpens at only a 20 degree bevel, so my knives were not as sharp as they could be.  After sharpening my Cutco knives with it, I learned that their factory bevel was 15 deg, so repair work was in order.

I followed the directions closely (lots of Amazon reviewers stressed this), starting with some low cost Kuhn Rikon knives.  It took a few strokes at the coarse level to establish the 30 degree edge (feel a burr along the entire length of the blade), but then just 2-3 strokes on the second and third stages and I was done.  My test of whether a knife is sharp is if it can shave the hair on my arm.  As of an hour ago, all of my knives now pass that test.  My wife grabbed one while preparing dinner and immediately asked if I had just sharpened it as it was notably sharper than the last time she had used it (and I do keep the knives pretty sharp)


This was not cheap at $159, but as the Cooks Illustrated folks said, it will probably be the last sharpener I ever buy.  
Now I need to find some other knives to sharpen!

    Nice, I used to sell cutco so I have lots of their knives. But somewhere along the way I lost my cutco sharpener. I may have to pick one of these up. I need a sharpener bad. I have been sending my knives back to the factory about every 9 months.
