I'm usually in too big a rush to cook and eat. But this chicken wasn't thawed enough for Thursday dinner, so back in the fridge she went for Friday. What a difference on skin after some drying out!  Normally it's not bad, but this time...  Wow. I am taking out of the bag and drying all the time now.   This chick was rubbed with DP red eye express.  Direct just off the hot side 400F dome for an hour.
