Any tips for cooking mangrove snapper?

I need a couple of ideas for cooking some whole mangrove snapper on the Big Green Egg.

I had one of the best fish dishes I have ever had recently at GW Fins in New Orleans. It was parmesan crusted mangrove snapper. You Tube this and you can actually watch the chef cook it. I live and fish and cooked in south LA all my life but this was exceptional. Modify it a bit for the egg and voila.

Have a 25% to 33% full firebox with the coals burning for a bit. I would not use any wood at all. Fish takes smoke way too easy, so make sure you have a clean fire, especially if the fish is fresh. You will be grilling direct.
The least amount of oil you can put on it to make the following stick:
1 part garlic powder
1 part onion powder
1/2 part Thyme
1/2 part Salt and pepper
A touch of paprika
Touch of cayenne pepper to taste
Mix rub in bowl. Sprinkle on fish.
I leave the lid open on all fish cooks. If the fire is too hot, choke it back some before you put the fish on. Should take about 10 mins depending on filet thickness.

Whoops - Just saw you are going to do it whole.
Same thing, just cut diagonal slices in the skin on both sides, and put the rub in the cavity also. Get a clean fire. cook indirect for about 20-25 mins.
If possible put fish on a rack, so the fish is not sitting in the liquid as it cooks.
