First reverse sear = success!
HAPPY FATHERS DAY TO ME! After smoking some chicken and sausage (because who wants to waste steak on non-appreciative kids??), I reverse-seared some 1-1/2" thick ribeyes. They were some of the best steaks I've ever cooked!
The dome thermometer spun all the way back around to 250... so it was HOT. I remembered to burp the egg and it's a good thing! Even after burping, the fire immediately flared up pretty strong.
I meant to cook to medium rare but they ended up on the upper side of medium. Next time I'll pull them at 120 instead of 125. In any case they were incredibly tasty!
I made some garlic herb butter to top them with and the wife did some olive oil and herb potatoes and green beans in the oven.

If aiming for medium rare, I would cook to 115 and then sear. Works perfect for me every time!
