My son is part of a competition BBQ team.  This weekend they competed in a Crossborder BBQ competition along Lake Ontario.  When I arrived they were cutting the brisket for turn in, I got a taste, it was the best I ever had.  Cut was an Australian Wagyu.  They cook on WSM's, ( team leader owns them), so this is OT).  Check out the smoke ring.

They won first place in the brisket.  They also ended up with 7th place for both chicken and pork, and a 2nd place for a side category for leftover bbq (Mac & Cheese stuffed with pulled pork, panko breaded and deep fried).   They ended up with Grand Champion for the competition. 



When it was over, we had to eat all that leftover 'Q.  A great day!
