Alan's Special with Sinaloa Veggies

My family eats at a local Mexican Restaurant quite often. My daughter's favorite dish is called Alan's Special with Sinaloa Vegetables.  The dish consists of Mexican rice covered in grilled chicken and melted cheese sauce.  The veggies (peppers, onions, zucchini) are served on the side. 

She he will be going away to college in a couple of months, so I figured we need to make it with her so she can cook it while away.  

My my wife showed he an easy cheese sauce with melted pepper jack cheese and milk.

We grilled chicken breast on the egg and roasted the veggies on my second tier. 

Because she she is just learning, we settled on white rice, which was fine.  

Overall, she was happy to be able to make something she enjoys.
