A Ribeye Cook!

Costco Ribeye, Lawery's season salt, fresh cracked pepper, grapeseed oil:


Fired up the egg to 750:


Slapped it on, 3 minutes per side:

Let it rest for 15 minutes:


Plate it with some mashed potatoes and enjoy the living sh*t out of it:

Disclamer - that is NOT my A-1. The wife is addicted to it.  I just turn my head and pretend it isn't happening.

    Great looking cook !  Did ribeyes tonight with potatoes.  Discovered need for more lump to get up to 700.  Still was fantastic. Another lesson learned. 
    1. Bettendorf, Ia with lots of time in Chattanooga, Tn.  LBGE, plate setter, ar, Looft lighter, maverick et-735, Rutland gasket, Smokeware SS cap, Kickash basket, and lots of cast iron.

    How is the quality of the meat from Costco? We buy our beef 1/2 at a time. If Costco is halfway decent, we have considered buying bulk numbers of steak, just to have them on hand when waiting now the next steer to be killed.

    That is a beautiful looking steak.  We won't give your wife a hard time about the A1.  I will say the pic looks better without it :)

    Okay have to ask a dumb question, since I consider myself quite the inexperienced Egger.  Resting for 15 minutes.  How does one do that without the meat getting cold?

    The Costco beef is probably better than average. The problem I have with it is my Costco packs the ribeye's four to a tray. One will be good. The second will be ok. The third will be fair. The forth steak will be trash.

    According to the Costco butcher there is a strict corporate policy that dictates how they cut the steaks off the loins. They are instructed to place the steaks into the tray in a certain order as they are cut off multiple loins, that way no customer gets to cherry pick the steaks.

    As most people are aware there is a sweet spot section in a loin that yields the best steaks for any given loin. If the steaks are cut outside this best area they are not as good of quality.

    If you get at least one steak out of four that is of lesser quality it in effect makes the meat cost 25% more in my opinion. Not as good a value as the sticker price would suggest.

    I would rather pay 25% more for my beef and be able to pick the steaks individually.

    That's my thoughts on Costco Beef. The same is true of Sam's Club.

    The only bad thing about costco steak is it's "blade tenderized". Google it.  There have been many a crusade trying to get them to stop.  Personally, I don't care.  Excellent meat all the way around!  I buy my meat there for my ground beef (short ribs, chuck, sirloin) too.
