Last Night's Project - Pit Beef?

Spent yesterday afternoon at the ball field working two games in 4 hours. Mama
Bear and Jr were on their way to Ft. Collins for the Color Vibe 5K
this mornings, so i was home doing laundry and cooking some pit beef for
sammies this week.

Got the egg set for 300-350 indirect and plan to run the eye of round up to around 110-115 before I pull and possibly reverse sear before I let it cool and slice.

Cut in half so I can run it through the slicer.

A nice pile of sliced beef.

OH MY GOD! This was SOOOO good. It was everything I could do not to eat the whole pile. I had to quick get it in freezer bags in and down to the deep freeze. Great flavor, just a hint of smokiness, and just a little pull in the chew.
Going to make some AWESOME sammies this week!

That really looks good!! I will try this, I have been stuck in a rut doing the same few cooks over and over. What did you season it with?

Seasoned with BGE Garlic Pepper (love the stuff).

Try it with a heavy heavy heavy coat of dizzy pig red eye.... Made 6 lbs for this weekend - everyone loves it!

Looks great. Mix some prepared horseradish in with your mayo when you make the sandwiches, it is awesome with pit beef.
